   The history of this site stretches back over a thousand years, beginning around the year 960 when it was founded as a Benedictine priory. By the twelfth century, the abbey had become a bustling center for the Premonstratensian order, whose members are often called the White Canons because of the color of their religious robes. However, life here has not always been peaceful. The monastery was abandoned in the late fifteenth century and sat derelict for years before being revived in the seventeenth century by the Hieronymite monks. It faced its greatest challenge during the French Revolution when it was suppressed and sold by the state. It was not until 1858 that Father Edmond Boulbon restored the Premonstratensian presence here, beginning a major revival that transformed the abbey into the magnificent complex you see today.

While the story is a playful fantasy, the liqueur itself is very real. Known as the Elixir of Frigolet, it is a potent spirit made from a secret blend of 30 different local plants and herbs, including that famous wild thyme. A quick practical tip: if you plan to enter the churches, please maintain a respectful silence, as they are active places of worship, and the basilica is usually open for visitors between 8 and 11 a.m. and two to seven in the evening.
